Hakka Lui Cha

Hi folks!

Hands-up if you are a big fan of this special dish called Hakka luicha :)

I loved this dish and wil always ordered one at the restaurant whenever I see them on the menu. However, not all taste as good..some have rather charcoal black toasts groundnuts but some fares really well! The best loicha I ever ate stil belongs to a Pandan Jaya Vegetarian Restaurant called Xu Lai Xiang made by an elderly auntie whom I fondly known as Cai Jie..it's been a long time since I had it. Having witness the effort and the tedious process of making this yummy dish, which really makes your mouth muscle works really hard, I only have salutes and no complaints whenever I ordered one..

Even though my mil is Hakka though, she is not particularly fond or know how to make this dish despite she is a great cook allrite! I do wish to learn how to make this yummy and healthy dish wih lotsa mints, basil, and greens..yummy...

Lunch Pack of the day: Mushroom steak, mash potatoes and asparagus

Hi folks!

Last Sunday, I attended a nutrition and health talk entitled "The Sustainable Diet for the Spiritual Era".

During the workshop, information on how a plant-based or meat-free or karma-free diet does for humanity in various aspects:

  • Health and Nutrition
  • Economics
  • Ethics
  • Religion
  • Karma

We were also being informed the right way to eat a balanced diet consisting of food from 5 colours with each of them representing Fire, Wood, Metal, Earth and Water elements or the different organs in our body.


After the workshop we have a cooking demo and food-tasting session.

All these foodie stuff has inspire me to prepare a healthier and more yummy-looking lunch pack for DH and me.

So here's one created with 5 colours in mind :D consisting of:
  • Green: Asparagus, basil leaves (mixed with cherry tomatoes), cucumber
  • Yellow: Mash Potatoes
  • Black: Mushroom steak
  • Orange: Carrot
  • Red:  Tomatoes

Rediscovering Fruits

Hi folks!

Lately, loss of appetite makes me walk down the aisle in search of food which can perks me up. From the fruit front, this stood up- plum.....used to be my staple during my pregnancy with Kay Yee.....daily I will gulp at least 3pcs. And every weekend, DH will bring me to restock at Carrefour. Slight sourish sweet, I got two of these to try again...yummmy...it got accepted! Yey!

Updates...

Hi folks!


It's been quite awhile since I update this blog (clearing spider webs). Been pretty occupied since the last Malaysia day weekend.


Have the great moment meeting up friends back from overseas after 8 years! Meet with some new friends from India...

and this coming weekend meeting up more friends from S'pore..guess this month is a get-together month for me and family :) How Blessed!


How have you all been lately? Hope you all have been well and joyful too!

Lunch Pack of the day: Eggplant Tofu with organic Siew Pak Choy and Tomato and Ramen

Hi folks!

I have been wanting to make this dish once more after a thumbs-up from DH during the previous attempt to cook the dish - Tong Po tofu, which is inspired by one of the Young Chef cartoon which DH used to watched when he was young and show it again to us as he grown up....

It's a rather nice, soothing-to-tummy, and appetite-rising dish may I say.

Today I match it with Japanese Ramen-like noodles plus the lightly stir-fry organic siew pak choy and organic tomato i received FOC for my purchase at BMS Organic last Saturday. (Do you know when you purchase more than MYR50 at BMS, they will free a pkt. of organic vege to you? For small family like mine..1-2 packs of FOC organic vege can last me for at least 3 meals..which is good!)

Back to the dish- Eggplant Tofu with organic Siew Pak Choy and Tomato and Ramen (which I have ate if for breakfast for I simply love warm food and stomach am feeling hungry by the thought of this dish..haha..really!)

Ingredients:
Brinjal (cube)
Tofu (cube)
tomato
siew pak choy
ramen
Seasoning to taste

Steps:
  1. First I boil the ramen and while it is boiling, i chop all the other ingredient (brinjal, tofu, tomatoes, siew pak choy).
  2. Then, once ramen is cooked, i rinse it with cold water and then lightly toss it with some msg-free homemade soysauce (show you the picture next round ya!), extra virgin olive oil, mixed herbs.
  3. I heat up the wok, add some water, oil and bit of brown sugar, salt and lightly toss in the tomatoes and siew pak choy. Lightly stir-fry and then place it on top of the ramen.
  4. Then i stir-fry the brinjal, add in some 100% chilli sauce, water, organic rock salt and brown sugar.
  5. Next, I add in the tofu cube when the brinjal is almost cooked to perfection(soft and chewy).
  6. Scoop it on and place on top of the ramen.
Estimated time taken: 20-30 mins.

There we have a yummy, comfort meal :) which has orange(tomato), green(siew pak choy), purple(brinjal), white(tofu), yellow(ramen) colours...now that reminds me...I should be adding some seaweed for the "black" colour ...will try it next time!

20-minute oven-baked pasta

Hi folks! Always one to find fast-to-cook, good-to-eat home-cooked recipes, I tried baked pasta with potatoes and brinjal, topped with mozzarella cheese and tomato paste with olive oil & mushroom seasoning...awesomely yummy comfort meal! Next round will try with mushroom sauce and other veg. (20mins with par-boiled pasta and lightly bland potatoes and brinjal..awesome fast n yummy meal! ;)

Random Act of Kindness

Hi folks!

Yesterday my office had a Raya celeb., but as I glance out at the feast area, I saw 3 goats(I was then told there are 6 goats) hanging there on BBQ/roasted. I cannot bear to join the feast though I know I could have taken other fruits and Veges available....(no offense to people on meaty diet) I just felt sorry for the goats and don't feel like eating...at the end of feast, one of my bosses dropped by and asked why I didn't join in, I just smiled..and then he brought me these cupcakes...simple yet kind gesture that is moving and touchy..thanks and bless his soul! Sometimes random act of kindness like this touches another soul without us knowing..so let's practice such random kindness in our life and make this earth a warmer&loving place to live in. Cheers! :)

Day 1, we found snail on the Bok Choy Vege..kids got excited and decided to build a home for the baby snail..they felt amazed how small the snail is and why it moves so slow..next day snail disappeared together with the big thunderstorm ..Next Cooking..guess what we got? Radhey's Heavenly Delights is pleased to inform you that we are celebrating Onam Sadya this year again. This time around we are brining MASTER CHEF Suresh Pallipatta from Kerala, India.

Master Chef Suresh was born into a Namboodari Brahmin family who are experts in traditional cooking. The mastery in preparing dishes has been passed on from generation to generation, Suresh being the 6th generation.

Master Chef Suresh has worked with his father and mother from the time he can remember, and has assisted his father for cooking at Travancore, Cochin & Samoothiri royal functions. He is fondly remembered for the feast he cooked for the 84th birthday celebrations for the Raja of Poonjar where 64 items were served on the banana leaf!.

Master Chef Suresh was the chef-in-charge for the cultural meet of Kerala school children (Yuvajanotsavam) where in 18,000 sadya had to be dished out twice daily for eight days! He had conducted Onam celebrations for an association in Dubai in 2008 over 3 days totaling 12,000 people. He also served as a Resident Chef for two years in Reserve Bank of India, Kerala headquarters.


Master Chef Suresh has demonstrated his expertise in TV shows time and again over the last few years including in Asianet, Amrutha TV etc. He has always stayed away from the lure of 'five star' hotels and concentrated on independent functions for the fear of not having his skills diluted or wasted as he puts in.  Suresh will be ably assisted by Sreejith, who has previously worked in a restaurant in JB for four years.


This year's Onam Sadya higlhight will be 'Chakka Pradhaman' and 'Mambazha Pradhaman' these two pradhmans are even not so common in India these days as cooking them is expensive and time consuming affair. Master Chef Suresh, informed that last time he cooked these two pradhman for a feast was years back. These are specially made for our guests to dine-in at Radhey's. Peparation of these two pradhman started two weeks back in India, where jackfuit and mango jam being prepared.


This Onam Sadya took us 6 months to plan and we assure you that you will not get this variety even in India. We will be using tamarind which is preserved for three years to make the 'puli inji' to give you unparalleled authentic taste.

Keeping the Indian tradition of eating together, we will serve all guests at same time and hence lunch has been divided into 3 slots, 12:00noon, 1:00pm & 2:00pm. Likewise dinner is divided into 4 slots,  6:00pm, 7:00pm, 8:00pm & 9:00pm.


We request our patrons to reserve a table within a slot according to their convenience on the dates from 29th August 2012 to 2nd September 2012.

Eating raw food

Hi folks! I am more conscious of adding raw food in our meals whether is cucumber, lettuce, tomatoes etc...which I felt good after taking these fresh and uncooked vegetables. What about you? Do you have the habit to nibble on fresh and raw food like salads to keep your days going? For the kids, they simply love raw cucumber. So I cut them into slices or stick-like as their snacks :) which is better than taking sugar-laden & sweet stuff like chocolate and ice-cream. Nurture them to make healthier food choices since young is very important . Agree? Have a healthy and happy Raya folks! Cheers!

20 minutes lunch pack- Whole wheat Stir fry spaghetti

Hi folks, i love spaghetti. This is my first time cooking a whole wheat spaghetti(a gift from a friend). I cooked it my usual favorite way, light stir fry but this time using coconut oil, added diced pumpkin(super delicious!!), broccoli, Vege ham, black olives, carrot, Chinese mushroom, basil, mixed herbs and must not left out some extra virgin olive oil at the end. Super yummy and satisfying meal which I can't help but took portion of it during breakfast :) albeit I feel the whole wheat spaghetti is better to be sautéed or spread on with sauces or gravy so it would absorb the water and nicer to munch on. My next experiment ;)

KY first buddy birthday party

Hi folks! Have your child start receiving birthday party invitation already? My gal has receive birthday invitation of her best buddy at school last month. But as we were outstation, we couldn't make it. Then her birthday, S invited KY to her sibling birthday party. I must say I am very touched by their friendship and also their loving parents who would do the extra miles for the joy of their kids organizing such fun party for their kids and their friends. KY had a great time at Laserwarzone. Also celebrating with her best buddy....now I am thinking how to celebrate for my gal this month... :) hoping for a simple but memorable one as it's her last yr@nursery :)

Black Bean Soup n Rice

Hi folks! Black beans are a very good source of protein for vegetarian. Blood-builder. Yesterday, I made a pot of black bean soup(black bean, groundnuts, red dates, tong sum, wolfberries). After scooping up the soup to thermos, I used the remaining ingredient to fried basmati rice(added mint leaves from garden and carrots)...talking about no wastage/one bean makes two dishes :) cheers!

Simple and Satisfying Lunch

Hi folks! On days when I woke up late. I would prepare simple lunch pack to work like this which takes merely 15mins to prepare. Here I am having Massimo Wheatgerm bread, fillings are omelette with black olives, carrot, mushrooms, spinach and tahini spread. 3 slices each for hubby and me. Quite filling and satisfying especially when I washed it down with a bottle of fruit juice...yummy...

The Other Ten Commandments

Parenting lessons

Hi folks!

Last weekend hubby was outstation and I took the kids to my mom's place. And KY who knew that her cousin is going back to her grandparents' place in Malacca and wanted to go along. She kept asking me to asked my sister if it's possible for her to go along. I told her to asked herself, just to check if she dares to do so. And she turned to her good buddy cum cousin Zoey and asked her to check with her mom(my sis) if she could follow along....My sis said perhaps another time....my dad added yeah..another day let's go Malacca together.

This feisty daughter of mine, 10+ days short of turning six is ever so ready to leave her mommy and join in some fun time.

When I thought she has given up. She followed me to my sister's place to send my niece home. She tried again asking her cousin, Zoey to ask her dad is she could come along (never give up spirits). Alas, my brother-in-law said let her follow then!

Phew...I half-heartedly packed her clothing, with my mom advising at my back asking me not to let her join the trip as the weather is hot and the house in Malacca is hot too and let KY spent time swimming over at her place....at the same time handing me a bag to place KY's clothing.

I am feeling apprehensive and wanted to try to dissuade KY from going for the trip but as I went down to the car area, I saw her happily sitting with her two cousins in the car....I was not ready to spoil her fun...

Alas she went and I called her few times on Sat and Sun.

When she came home last night, truely, she was dehydrated(very often when she got excited, she would forget to drink water!! And I can't blame anyone ...and not even my sis who kind heartedly let her follow even though she is taking care of two kids of her own..)

Oh well, I hope she recovers fast and learnt the lessons. So do I. Since she is really too young to decide what's good for her. We as parent should be firm to say No when it's needed? Is that so?

I am on the fence. Really. At one point I want my kids to be accountable and to have freedom to choose. At the other end, I am not ready to face the "music" per say.

Before she collapse into her zzzz, I asked her if she had a good time and she smiled and said yes and doze off...and today she gotta skip one day as temperature is rising slightly. 

Hope she will get well soon and I need to have a talk with her about this incident so that she learnt from it. If she doesn't know how to take care of herself, she will not be allowed or be trusted to go on trip without mommy ever again. FULL stop.

What do you all do if you were in my shoes?

My KY is only 5+ yrs old but she had been overnite once over a holiday camp with other children. On one side I see the independence and strength in her. At the other side I am questioning myself as a mom who make the decision to say Yes or No to her requests...

Learning experiences....

A typical breakfast@work

Hi folks! What do you usually have for breakfast during working days? Or do you take any breakfast at all? Break-fast..we are breaking fast after a long night of fasting. Breakfast is a must for me...no matter how simple it is. My typical breakfast would be a cup of oats, a bottle of Vit C(dissolved) and fruits. Do you believe that after having these for 5 days, I don't fancy fried kuee teow/noodles with curry sauce like I used to for weekend breakfast..my body just prefer something light and less oily automatically. Oats are good for those with high cholesterol problem, and with fruits you get all the fibre you need. With such diet, constipation will be a history ;)

Nourishing Drink after each cycle

Hi folks! Since young, my mom taught me to boil some nourishing drink after each menses end. Here is one recipe I picked up from my mil. Double-boil red dates, black dates, tong kuai & wolfberries with either eggs(for me I added shiitake mushroom cubes). This amazing drink helps replenish Qi and blood. The after effect is as if I drank coffee.. Why? Cos feeling rejuvenated after drinking it...Awesome.. The good thing of having such drink is I feel better when the next cycle comes, less tired and more energetic :) What are the special things you would make after each cycle ends or any special things you do during the cycle to make it more bearable ? Fruits Platter

Hi folks! Me and SE are early bird. During weekends, we would enjoy these fruits platter together..yea we could finish them all just the two of us. Sometimes if KY woke up early she would join us. I think having these fruits ready anytime of the day is handy as it helps to avoid kids snacking on chocolates, crackers etc..what's your favorite snacks at home?

Washing Vegetables

Hi folks! Now each time after my marketing, I would wash the vegetables with Biosafe as it makes the vegetables last longer and saves my cooking time. Of course there are some leafy vegetable which should only wash just before you cook. But others I tried like potatoes, sweet corn, cucumber, broccoli, asparagus can be per-wash and keep fresh for several days. It helps me a lot when I do my cooking during weekdays when I am working :)

Washing grapes

Hi folks! SE loves eating grapes. However, he finds the skin of the grapes bitter(I used to soak it in vegewash and salt before this). Thus, each time he eats it, he will either peel the skin himself before eating or ask us to do it for him. Now with Biosafe, I will wash the grapes with it and tadaa SE will happily eats his grapes without peeling. And the grapes are so sweet! Look at this before and after picture..the water is so murky that I have to throw the water away even though it is said the water can be reused 20 times (wash).

Wholesome Lunch Pack- Salad,Multigrain and nuts rice and soup

Hi folks!
I made this for lunch one day, cooking the rice on top of black bean soup. Next, scoop up the soup and cook the remaining black beans and nuts together with the multigrain rice(using all ingredients, no single bits of wastage). Together with a simple salad made out lettuce and cherry tomatoes with olive oil and balsamic vinegar dressings...yum..this make a spectacular, flavourful wholesome meal...salad+soup+rice...yummy..

What meals can be done within 20minutes without "watching" over it?

Hi folks!

There are times when I am feeling not-too-well, but lunch still need to be served (as I dislikes serving hubby bread as lunch if I could). What can meals can be prepared within 20mins.? And these are "unseen" or "unmanned" 20minutes.

This morning I only have 20mins to get myself prepared, prepare lunch, prepare the kids (brush teeth, changed into their uniform, make their breakfast drinks)...so what I did at the moment in time is to look at my fridge and crack my head!

Voila! Suddenly i remembered my trusty steamer. So what can I prepare in my steamer within 20mins.? Steamer is a great tool especially when you don't have time to stand over the stove cutting and cooking.

So, here's what I have prepared for DH for lunch using the steamer:
  1. hard-boiled egg x 2
  2. pasta topped with mushroom gravy(from packaged)
  3. dumplings x4
  4. Lemongrass drink I made to sooth our cough
Add on: 3 slices of Gardenia Butterscotch bread for breakfast..and pack the above in nice bento lunchbox (presentation would make up for the lack of taste or even time..do you believe it :D..great helper!)

Sorry no pictures...as I only have 20 minutes at hand to get all things ready!

So time to make use of steamer more...and cook up some new recipes with the trusty steamer!

New discovery for me is by putting just enough HOT water to cover the pasta and steam it for 20mins. it'll be well-cooked...pretty cool..so next time i could probably prepare my pasta this way when i don't have time to watch it boiling over the stove!
